Mediterranean Whitei Bean Soup
This one pot flavorful and wholesome Mediterranean Whitei Bean Soup is made with simple and affordable ingredients. It's packed with plant-based protein, fiber, phytonutrients, antioxidants, and nutrients that nourishes your body and protects your health.
Ingredients
- 1 large red onion chopped
- 4 cloves fresh garlic minced
- 1 Tbsp avocado oil
- 32 ounces veggie broth organic
- 2 15 oz. cannellini beans organic, drained and rinsed
- 3 large carrots chopped, organic
- 1 pint grape tomatoes sliced
- 1 tsp thyme dried, organic
- 3/4 tsp salt
- 1/2 tsp oregano dried, organic
- 1/2 tsp black pepper
- 2 cup baby spinach organic
Instructions
- In a large pot, Add oil, red onions, and garlic. Saute until soft and fragrant.
- Add in vegetable broth and remaining ingredients, except for spinach. Bring to a boil, then simmer for 15-20 minutes or until carrots are soft.
- Add baby spinach during last 5 minutes of cooking. Remove from heat and top with homemade vegan parmesan cheese.
