Ingredients
  

  • 1 large red onion chopped
  • 4 cloves fresh garlic minced
  • 1 Tbsp avocado oil
  • 32 ounces veggie broth organic
  • 2 15 oz. cannellini beans organic, drained and rinsed
  • 3 large carrots chopped, organic
  • 1 pint grape tomatoes sliced
  • 1 tsp thyme dried, organic
  • 3/4 tsp salt
  • 1/2 tsp oregano dried, organic
  • 1/2 tsp black pepper
  • 2 cup baby spinach organic

Instructions
 

  • In a large pot, Add oil, red onions, and garlic. Saute until soft and fragrant.
  • Add in vegetable broth and remaining ingredients, except for spinach. Bring to a boil, then simmer for 15-20 minutes or until carrots are soft.
  • Add baby spinach during last 5 minutes of cooking. Remove from heat and top with homemade vegan parmesan cheese.
