  • 2 15 ounces cans black beans, rinsed and drained low sodium, organic or use 1 pound dried beans
  • 6 cloves garlic, minced
  • 4 bay leaves
  • 2 tbsp avocado oil
  • 1 medium sweet onion, diced
  • 1 orange bell pepper, seeded and diced can use green or red
  • 1 tbsp oregano, dried
  • 1 tbsp cumin
  • 1/2 tbsp salt
  • 1 tsp black pepper
  • 2 cups white rice, rinsed organic
  • 4 cups vegetable broth
  • minced cilantro and lime wedges to serve optional
