- 2 15 ounces cans black beans, rinsed and drained low sodium, organic or use 1 pound dried beans
- 6 cloves garlic, minced
- 4 bay leaves
- 2 tbsp avocado oil
- 1 medium sweet onion, diced
- 1 orange bell pepper, seeded and diced can use green or red
- 1 tbsp oregano, dried
- 1 tbsp cumin
- 1/2 tbsp salt
- 1 tsp black pepper
- 2 cups white rice, rinsed organic
- 4 cups vegetable broth
- minced cilantro and lime wedges to serve optional
